Brief;
BBQ season is almost here, summer is always a happy time in our household so this week we decided to experiment with some burger recipes. Homemade burgers are so easy to make and taste 100 times better than the supermarkets, simply add some sweet potato fries or a hearty salad to the side and you’ve got yourself a simple, tasty and nutrient packed dinner for less than £2.50 a portion (as you can see our portions aren’t small!)
You will need;
A chopping board, knife and a bowl.
Ingredients (to serve 2 - 4):
- 500g of turkey mince.
- 1 medium red onion, diced.
- 2 cloves of chopped garlic.
- 100g of feta, crumbed.
- 50g frozen spinach
- 1 large egg
- 2 tbsp of flax seeds (can use breadcrumbs - not as nutritious)
- 1 tsp of oregano
- 1 tsp of chilli flakes (if your not a fan of spice, substitute with 3 sun-dried tomatoes for extra flavour)
- Iceberg lettuce or freshly baked rolls.
- Handful of rocket.
- Relishes and sauces of your choice.
Method
Step 1: Thaw the spinach, squeeze out as much moisture as possible and roughly chop.
Step 2: Combine the spinach with the turkey mince, onion, garlic, feta, egg, flax seeds and spices in a bowl - getting your hands dirty to bind the mixture and making sure everything is evenly combined.
Step 3: Season the mixture with salt and pepper and split it evenly into 4 or 6 burgers, press them firmly together (without overworking the mince) and place either under the grill or onto the BBQ.
Step 4: The burgers will take anything from 8-15 minutes to cook all the way through, flipping about half way through, just make sure they have cooked them enough before you attempt your first flip. Once their cooked, the creations can begin.
I love using lettuce wraps for my masterpieces because the I can have two without getting bloated by all the bread! I use 2 leaves from an iceberg lettuce, add my burger, jalapenos, tomato relish and a dollop of mayo (you could used smashed up avocado) carefully fold and voila, dinner is served!
