Dinner Party Dessert made Healthy!

Brief;

I love entertaining and if you’ve stumbled onto this page then I’m guessing you do to! Food is usually at the centre of many social occasions, let’s face it we wouldn’t sit at the table that long chatting without it! We teach our clients to enjoy the foods their putting in their bodies but to also make sure the food you love - will love you back. This recipe is a great example of that, all the sweetness of a naughty dessert, wrapped up in a powerful nutrient punch!

You will need;

A food processor, chopping board, knife and a cake/ flan tin.

Ingredients (to serve 4):

  • 10 dried dates
  • 250g of mixed nuts (I used cashews, pecans & walnuts)
  • 2tbsp of flax seeds
  • 2 tbsp of honey or agave nectar
  • 250g of full fat Greek yoghurt
  • Fruit for decoration.
  • Optional extras for different flavoured bases: Desiccated coconut or cacao powder.

 

Method

Step 1: Place the dates in boiling water to soften for 10 minutes.

Step 2:Meanwhile, blend the nuts and flaxseeds together. Once the dates are soft add those and the honey to the mixture and blend together.

Step 3: Line a tin with grease-proof paper and press the mixture firmly down into the tin to cover the full surface making sure the sides are a little higher.

Step 4: Leave to chill for 2 hours in the fridge (it will also be fine left for up to 24 hours) Then up to 1 hour before serving add a layer of Greek yoghurt over the base and decorate with artistic fruit placings!

I first saw a version of this recipe here and I must say her’s is much prettier than mine but after a main meal we don’t need all that fruit - just a little bit of natures sweetness is enough to enjoy a pud without the damaging side effects. Next time you’ve got people over give it a try - my lot didn’t even realise it was a healthy alternative until I told them!
