Brief;
I love any dish that involves chucking everything in a pot and waiting, it saves on time and washing up but unfortunately this usually leaves food tasteless. Thankfully soups are generally the exception to that rule and today recipe definitely is! If you fancy something a bit different from the standard carrot and coriander but still want your soup to be so vibrantly orange that there’s a chance you could go ginger - this ones for you.
You will need;
A knife, chopping board, peeler, hand blender, slow cooker.
Ingredients (to serve 4):
- 700g of carrots peeled & roughly chopped
- 2 oranges juice and grated rind
- 1 large onion roughly chopped
- 1 Tbsp of fennel seeds roughly crushed
- 1 litre of vegetable stock
- 5 Tbsp of creme frachie
- Salt & Pepper
- Tsp of seed mix & parsley to garnish.
Method
Step 1: Turn the slow cooker on and chuck everything in apart from the creme frachie and garnish.
Step 2: Place the lid on and leave on low for 6-8 hours.
Step 3: Remove the lid, add the creme frachie and blend to your desired consistency, adding extra stock if needed.
Step 4: Serve immediately, sprinkled with seeds and parsley for garnish.
Make this soup even heartier by adding a sweet potato or top it with some protein rich pre-prepared shredded ham.
